La Craie means “chalk” in French. The hillsides of the Chalk Hill Valley are streaked with a white chalky substance, thus the name of the valley. In fact, it is not chalk but ash from old volcanic activity in the area. Mineral-rich soils contribute to the French flavors favored by the vintners.
